Qualifications
- Minimum 5 years of sushi chef experience required
- Strong knife skills and advanced knowledge of sushi and sashimi preparation
- Experience with fish fabrication, portioning, and proper seafood handling
- Knowledge of Japanese ingredients, techniques, and presentation
- Strong understanding of food safety, sanitation, and proper storage
- Ability to maintain quality and consistency during high-volume service
- Excellent organization and attention to detail
- Ability to work efficiently and calmly in a high intensity environment
- Strong communication and teamwork skills
- Dependable, punctual, and committed to maintaining high culinary standards

Job Requirements
- Valid New Mexico food handler card (or ability to obtain one prior to start date)
- Availability to work evenings, weekends, and holidays, as the restaurant’s schedule requires
- Ability to stand for extended periods and work in a fast-paced kitchen environment
- Ability to lift up to 50 pounds, and to bend, reach, and perform repetitive motions with knives and kitchen tools
- Ability to work with raw seafood and common allergens
- Must provide own knives (if this applies at Izanami)
- Eligibility to work in the United States
- Ability to follow dress code and grooming standards for the kitchen
Key Responsibilities
- Prepare and present sushi, sashimi, and other Japanese dishes to Izanami’s standards of quality, consistency, and presentation
- Break down, fabricate, and portion whole fish and other seafood with precision, minimizing waste
- Inspect incoming seafood and ingredients for freshness and quality, and ensure proper receiving and storage
- Maintain mise en place, station setup, and readiness for every service
- Execute dishes accurately and efficiently during high-volume service while keeping a calm, professional presence
- Follow all food safety, sanitation, and temperature control procedures, and keep the station clean and organized at all times
- Monitor par levels and inventory, and communicate ordering needs to kitchen leadership
- Collaborate with chefs, kitchen staff, and front-of-house team members to ensure seamless service
- Engage with guests at the sushi bar when appropriate, offering a warm and knowledgeable experience
- Contribute to menu development and seasonal specials as opportunities arise
- Support training and mentoring of junior team members and uphold Izanami’s culinary standards
